Chocolate Peanut Butter Cupcakes with Choco-Peanut Butter Swirl Frosting

When I found out November was peanut butter month, I just had to get my apron on and whip up some sort of baked goodness. This recipe is an indulgent one…the sponge is dense and sticky to eat and has a hidden peanut butter in the centre that takes it to an all new level of gooey!

Cupcake Ingredients:                                               

  • 170g butter/Stork
  • 70g caster sugar
  • 100g brown sugar
  • 1tsp vanilla paste (or equivalent)
  • 3 eggs
  • 140g self raising flour
  • 50g cocoa powder
  • 1tsp baking powder
  • 150ml buttermilk
  • 100g peanut butter + 6-8 tablespoons

Frosting Ingredients:

  • 250g Butter
  • 400g icing sugar
  • 100g dark chocolate
  • 50g peanut butter
  • 1tsp vanilla paste (or equivalent)
