    Hi,

    When I am trying to spread icing on my cakes, sometimes chunks of the cake will stick to the icing knife and be ripped out :( I don’t know what to do to prevent this… Usually it doesn’t happen with buttercream, but I tried making a red velvet last week and it was completely destroyed by the cream cheese frosting. Any ideas of what I can do to prevent this?
